Ingredients
- 1 cup Belov Blueberry Coconut Oat Mix
- 1 tsp lemon zest
- 1 tsp baking powder
- 1 egg
- 2 ripe bananas, mashed
- 1/2 cup blueberries (frozen or fresh)
- 1/4 cup 10% fat plain yogurt
- 1/2 tbsp natural vanilla extract
Steps
- Place the rack in the center of the oven and preheat to 350°F.
- In a large bowl, mix all the dry ingredients.
- Add all other ingredients except blueberries.
- Stir until smooth.
- Add the blueberries and mix gently.
- Divide the mixture among the muffin tins.
- Bake for 25-28 minutes or until a toothpick inserted in the center of a muffin comes out clean.
