
Blueberry and Yogurt Baby Waffles

Ingredients
- 1 cup Belov oat mix, blueberry coconut flavor or plain flavor
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 eggs
- 1/2 cup milk of your choice
- 1 cup plain Greek yogurt 10% fat
- 3 tbsp coconut oil
- 1 tbsp natural vanilla extract
- 2/3 cup thawed and crushed blueberries (drain the juice through a colander)
Steps
- In a bowl, mix all the dry ingredients.
- In another bowl, mix the liquid ingredients (except the blueberries).
- Add the dry ingredients and mix well. This can be done in a blender. Let the mixture sit for 10 minutes to thicken.
- Add the blueberries and mix gently.
- Preheat the waffle iron. Brush the waffle iron with oil and pour in the mixture. Bake for 3 to 5 minutes, until the waffles are golden brown and crispy. Repeat with the remaining mixture.
