Ingredients
- 3/4 cup Belov Plain Oat Mix
- 3/4 cup whole wheat flour
- 1 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp ground ginger
- 2 eggs
- 1/2 cup milk of your choice
- 3 tbsp coconut oil
- 1 tbsp natural vanilla extract
- 3/4 cup grated carrots
Steps
- Place the rack in the center of the oven and preheat to 350°F.
- In a large bowl, mix all the dry ingredients.
- Add all other ingredients.
- Stir to obtain a homogeneous mixture then add the carrots.
- Divide the mixture among the muffin tins.
- Bake for 20 to 22 minutes or until a toothpick inserted in the center of a muffin comes out clean.
