Ingredients
  • 3/4 cup Belov Plain Oat Mix
  • 3/4 cup whole wheat flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground ginger
  • 2 eggs
  • 1/2 cup milk of your choice
  • 3 tbsp coconut oil
  • 1 tbsp natural vanilla extract
  • 3/4 cup grated carrots
Steps
  • Place the rack in the center of the oven and preheat to 350°F.
  • In a large bowl, mix all the dry ingredients.
  • Add all other ingredients.
  • Stir to obtain a homogeneous mixture then add the carrots.
  • Divide the mixture among the muffin tins.
  • Bake for 20 to 22 minutes or until a toothpick inserted in the center of a muffin comes out clean.

*If you choose standard molds, cooking will take 25 to 28 minutes and you will get 12 muffins!
